- Preheat oven: Preheat to 350°F (175°C). Grease two 9-inch (23 cm) round cake pans. Line the bottoms with parchment paper and dust the sides with cocoa powder for easy release and extra richness.
- Mix dry ingredients: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Cream butter and sugar: In a separate bowl, cream the softened butter and sugar until light and fluffy (about 3–4 minutes).
- Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract until smooth.
- Combine with dry and wet: Alternately add the dry ingredients and buttermilk to the creamed mixture in 2–3 additions, mixing gently until just combined. Do not overmix.
- Add the coffee: Slowly pour in the hot coffee or boiling water. Mix until the batter is smooth, shiny, and slightly loose. (It’s supposed to be pourable.)
