1️⃣ Marinate the Shrimp:
- In a medium bowl, combine shrimp, chipotle chili powder, olive oil, garlic, lime juice, salt, and pepper.
- Toss to coat well and marinate for 10–15 minutes while preparing other ingredients.
2️⃣ Cook the Shrimp:
- Heat a skillet over medium-high heat.
- Add the shrimp and cook for 2–3 minutes per side until pink and opaque. Do not overcook.
- Remove from heat and set aside.
3️⃣ Warm the Tortillas:
- Heat tortillas in a dry skillet or microwave until warm and flexible. Keep warm in a towel or tortilla warmer.
4️⃣ Assemble the Tacos:
- Place shredded lettuce or cabbage onto each tortilla as a base.
- Top with shrimp, diced tomatoes or pico de gallo, crumbled cheese (if using), and chopped cilantro.
5️⃣ Serve:
- Serve immediately with lime wedges for squeezing and optional toppings like sour cream or sliced avocado for extra richness.
