Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine peanut butter, sugar, and egg. Stir until smooth and fully mixed.
Scoop about 1 tablespoon of dough and roll into balls. Place them on the baking sheet, leaving some space between each.
Use a fork to gently press a crisscross pattern on top of each cookie.
Bake for 8–10 minutes, or until the edges are lightly golden. The centers will look soft — that’s perfect!
Cool on the pan for 5 minutes before transferring to a wire rack. They’ll firm up as they cool.
