👩🍳 Directions
1️⃣ Prepare the Chimichurri Sauce
- In a medium bowl, combine chopped parsley, cilantro, minced garlic, red chili (or red pepper flakes), olive oil, lemon juice, red wine vinegar (if using), salt, and pepper.
- Stir well to combine, then set aside to allow the flavors to meld while you cook the shrimp.
2️⃣ Cook the Shrimp 🍤
- Season shrimp with salt and black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet in a single layer and cook for 1–2 minutes per side until pink, opaque, and cooked through.
3️⃣ Toss the Shrimp with Chimichurri 🌿🍤
- Remove the cooked shrimp from the skillet and toss with the chimichurri sauce until fully coated.
- Serve immediately, garnishing with extra cilantro or parsley if desired.
4️⃣ Serve 🍽️
- Serve the shrimp chimichurri as an appetizer, over rice, pasta, or mixed greens for a light meal.
- Optionally, drizzle with extra chimichurri sauce for more flavor!
