1️⃣ Prepare the Chimichurri Sauce

  1. In a medium bowl, combine chopped parsley, cilantro, minced garlic, red chili (or red pepper flakes), olive oil, lemon juice, red wine vinegar (if using), salt, and pepper.
  2. Stir well to combine, then set aside to allow the flavors to meld while you cook the shrimp.

2️⃣ Cook the Shrimp 🍤

  1. Season shrimp with salt and black pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet in a single layer and cook for 1–2 minutes per side until pink, opaque, and cooked through.

3️⃣ Toss the Shrimp with Chimichurri 🌿🍤

  1. Remove the cooked shrimp from the skillet and toss with the chimichurri sauce until fully coated.
  2. Serve immediately, garnishing with extra cilantro or parsley if desired.

4️⃣ Serve 🍽️

  • Serve the shrimp chimichurri as an appetizer, over rice, pasta, or mixed greens for a light meal.
  • Optionally, drizzle with extra chimichurri sauce for more flavor!
