Peanut Butter Cup French Toast Rolls

Ingredients

  • 8 slices of soft bread
  • Peanut butter
  • Nutella or chocolate spread
  • 2 medium eggs
  • 50ml milk
  • 1 tsp vanilla extract
  • 3 tbsp granulated sugar
  • 1 tsp cinnamon (optional)

Instructions

  1. Start by preparing your work surface. Lay out the 8 slices of soft bread on a clean cutting board. If the bread has thick crusts, carefully trim them off to ensure each roll can be tightly wrapped and cooked evenly. Soft, fresh bread works best as it rolls without cracking.
  2. Spread a generous layer of peanut butter over each slice of bread, leaving about a 1cm border around the edges to prevent the filling from spilling out. On top of the peanut butter, spread a thin layer of Nutella or chocolate spread. The combination of the creamy peanut butter and chocolate will create a rich, gooey centre once cooked.
  3. Carefully roll each slice of bread from one end to the other, keeping the filling inside. Press gently to seal the edge so it doesn’t open during cooking. If needed, you can use a toothpick to secure the roll, removing it after cooking.
  4. In a shallow bowl, whisk together the eggs, milk, vanilla extract, granulated sugar, and cinnamon (if using). The sugar will help caramelise the rolls during cooking, while the cinnamon adds a warm, subtle spice. Make sure the mixture is smooth and well combined, without lumps.
  5. Heat a non-stick frying pan over medium heat. Add a small knob of butter or a light drizzle of oil to coat the pan. Dip each roll into the egg mixture, ensuring all sides are evenly coated. Allow excess mixture to drip off to prevent sogginess.
  6. Place the rolls seam-side down into the pan. Cook for 2–3 minutes on each side, gently turning to ensure even golden-brown colouring. Look for a slightly crisp exterior and a soft, gooey interior. Avoid cooking on too high heat, as the sugar in the egg mixture can burn quickly.
  7. Once cooked, remove the rolls from the pan and place them on a plate lined with kitchen paper to absorb any excess butter. Let them rest for a minute to allow the filling to set slightly, making them easier to slice or serve.
  8. Serve warm, either whole or sliced into bite-sized pieces. You can dust with extra sugar or a sprinkle of cinnamon for presentation. These rolls pair beautifully with a drizzle of chocolate sauce, a scoop of vanilla ice cream, or fresh berries for added freshness and flavour.
