📝 Ingredients

For the Soaked Fruits & Nuts

  • 2 cups mixed dried fruits (raisins, black currants, prunes, cherries, dates), finely chopped
  • 1/2 cup chopped cashews
  • 1/2 cup dark rum (or orange juice for non-alcoholic version)

For the Cake

  • 1 cup (226g) butter, softened
  • 1 cup (200g) brown sugar
  • 4 large eggs
  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

For the Caramel Syrup

  • 1/2 cup (100g) granulated sugar
  • 2 tbsp (30ml) water (for caramelizing)
  • 1/4 cup (60ml) hot water (to deglaze)
