: Avocado Egg Salad

Ingredients

  • 2 ripe avocados, diced
  • 2–3 boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely diced (optional)
  • 2 tbsp fresh cilantro, chopped (optional)
  • 1–2 tbsp olive oil (for dressing)
  • 1 tbsp lime juice (or lemon juice for a different twist)
  • Salt and black pepper to taste
  • Optional: a pinch of chili flakes or paprika for a spicy kick
