Appalachian Potato Candy (Sweet, Peanut Butter Delight)

Instructions

  1. Prepare the potato. Start by peeling the potato and boiling it until soft. Once cooked, mash it well, making sure there are no lumps. The mashed potato will give the candy a smooth, dough-like texture and provide just the right consistency for rolling.
  2. Add powdered sugar. Gradually add powdered sugar to the mashed potato. The potato will release moisture as you begin adding the sugar, but keep mixing and adding more sugar until a dough forms. This process may take some patience, but trust that it will come together! The consistency should be soft but firm enough to roll out.
  3. Roll out the dough. Transfer the dough to a work surface dusted with powdered sugar. Be sure to dust your rolling pin as well to prevent sticking. Roll out the dough into a flat rectangle about 1/4 inch thick.
  4. Spread the peanut butter. Spread a generous layer of peanut butter over the dough, leaving the edge closest to you clean (this helps prevent peanut butter from spilling out when rolling). Be sure to cover most of the surface, but you can leave a small gap on the edge furthest from you to keep the peanut butter from spilling as you roll.
  5. Roll into a log. Carefully roll the dough into a tight log, starting from the edge closest to you. Use a spatula dusted with powdered sugar to help loosen the dough from the surface and keep the roll tight and smooth.
  6. Refrigerate. Place the rolled log in the refrigerator and let it chill for at least 2 hours, or until it is firm enough to slice cleanly. This step is important to help the candy hold its shape.
  7. Slice and serve. Once the candy has set, remove it from the refrigerator and slice it into bite-sized pieces. The slices will have a smooth, creamy peanut butter center surrounded by sweet, sugary dough.
