Frosting and Assembly
- While the cupcakes are cooling, prepare the spiced buttercream frosting. In a large mixing bowl, beat the softened unsalted butter with a hand mixer or stand mixer on medium speed until it becomes light and fluffy. This typically takes about 2-3 minutes.
- Gradually add the powdered sugar, about half a cup at a time, mixing thoroughly between additions. Scrape down the sides of the bowl as needed to ensure all of the sugar is incorporated. This process allows the frosting to become thick and smooth.
- Add the ground cinnamon, ground nutmeg, and ground cloves (if using). The spices are key in creating that warm, fall flavor profile, and the combination of cinnamon and nutmeg pairs perfectly with the apple cider cupcakes. Beat the frosting again until fully combined and smooth.
- Pour in 2 tablespoons of apple cider, and beat the frosting on high speed for about 2-3 minutes, or until it becomes fluffy and spreadable. If the frosting is too thick, add a little more apple cider, one teaspoon at a time, until you reach the desired consistency. If it’s too thin, add a bit more powdered sugar to thicken it up.
- Once the cupcakes are completely cooled, use a butter knife or piping bag to frost each cupcake with the spiced buttercream. If you’d like a more decorative touch, pipe the frosting into swirls or rosettes, or use a spatula for a more rustic look.
- Optionally, sprinkle a light dusting of cinnamon or grated apple on top for a decorative and flavorful finish. This adds a touch of elegance and highlights the apple cider flavor in the cupcakes.
Notes
- For a more intense apple flavor, try using apple sauce instead of oil. It will slightly alter the texture, but it enhances the flavor even further.
- These cupcakes can be made in advance. Store them in an airtight container at room temperature for up to 2 days, or refrigerate them for up to 4 days. Allow the cupcakes to come to room temperature before serving for the best flavor and texture.
- For an extra indulgent treat, you can add chopped pieces of dried apple or apple chips to the batter before baking.
