Authentic Chicken Shawarma with Garlic Sauce

Instructions

1. Marinate the Chicken

  1. In a large bowl, whisk together the yogurt, olive oil, garlic, lemon juice, and all the spices until smooth and fully combined.
  2. Add the chicken and coat thoroughly with the marinade. For best results, use your hands or tongs to ensure every piece is evenly covered.
  3. Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to let the flavors penetrate deeply.

2. Cook the Chicken

  1. Remove chicken from marinade and let sit at room temperature for 15 minutes before cooking.
  2. Grill method: Preheat a grill to medium-high. Grill chicken for about 5–7 minutes per side, or until fully cooked and slightly charred.
  3. Pan-fry method: Heat a skillet or grill pan over medium-high heat. Cook the chicken in batches, searing each side until golden and cooked through, about 6–8 minutes total.
  4. Let the chicken rest for 5 minutes, then slice thinly across the grain.
