For the Soaked Fruits & Nuts
- 2 cups mixed dried fruits (raisins, black currants, prunes, cherries, dates), finely chopped
- 1/2 cup chopped cashews
- 1/2 cup dark rum (or orange juice for non-alcoholic version)
For the Cake
- 1 cup (226g) butter, softened
- 1 cup (200g) brown sugar
- 4 large eggs
- 1 ¾ cups (220g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
For the Caramel Syrup
- 1/2 cup (100g) granulated sugar
- 2 tbsp (30ml) water (for caramelizing)
- 1/4 cup (60ml) hot water (to deglaze)
