Avocado Corn Pasta Salad 🌽🥑

👩‍🍳 Instructions

1️⃣ Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook farfalle pasta according to package directions until al dente.
  • Drain and rinse under cold water to stop cooking. Set aside to cool completely.

2️⃣ Prepare the Dressing

  • In a small bowl or jar, whisk together olive oil, lime juice, minced garlic, Dijon mustard (if using), salt, and pepper.

3️⃣ Combine the Salad

  • In a large bowl, combine the cooled pasta, cherry tomatoes, corn, red onion, and cilantro or parsley.
  • Add the dressing and toss to coat everything evenly.
  • Gently fold in the diced avocado just before serving to avoid browning or mashing.
