1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil. Cook farfalle pasta according to package directions until al dente.
- Drain and rinse under cold water to stop cooking. Set aside to cool completely.
2️⃣ Prepare the Dressing
- In a small bowl or jar, whisk together olive oil, lime juice, minced garlic, Dijon mustard (if using), salt, and pepper.
3️⃣ Combine the Salad
- In a large bowl, combine the cooled pasta, cherry tomatoes, corn, red onion, and cilantro or parsley.
- Add the dressing and toss to coat everything evenly.
- Gently fold in the diced avocado just before serving to avoid browning or mashing.
