Step 2: Prepare the Meatballs

- Divide the mixture into 12 portions. Flatten each portion slightly, place a cube of cheddar cheese in the center, and wrap the meat around the cheese, rolling it into a ball shape to fully seal the cheese inside.
Step 3: Wrap in Bacon
- Wrap each beef ball with a slice of bacon, making sure the ends overlap slightly. Secure each bomb with a toothpick to hold the bacon in place.
Step 4: Cook the Bombs
- Grill Method: Place the bacon-wrapped bombs directly on the grill grates. Cook for 25β30 minutes, turning occasionally to ensure the bacon crisps evenly and the beef cooks through.
- Oven Method: Arrange the bombs on the prepared baking sheet. Bake for 25β30 minutes, or until the bacon is crispy and the internal temperature of the beef reaches 160Β°F (71Β°C).
- For extra crispiness, switch to broil for the final 2β3 minutes β but watch closely to avoid burning.
Step 5: Make the Dipping Sauce
- In a small bowl, combine the mayonnaise, ketchup, pickle relish, vinegar, sugar, salt, and paprika. Whisk until smooth and creamy.
- Refrigerate the sauce while the bombs finish cooking to let the flavors meld together.
Step 6: Serve and Enjoy
- Once the bombs are done, let them rest for 3β5 minutes before serving. This allows the cheese inside to set slightly and prevents burning your mouth.
