- Preheat the oven. Set your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat to prevent sticking and ensure even baking.
- Prepare the apples. Peel and chop the apples into small, bite-sized pieces. Make sure the apples are evenly chopped so they cook uniformly in the fritters.
- Mix the dry ingredients. In a medium-sized bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until everything is evenly combined.
- Combine wet ingredients. In another bowl, whisk together the milk, egg, and vanilla extract until smooth and fully blended.
- Make the batter. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix; the batter should be thick and slightly lumpy, with the dry ingredients absorbed. Fold in the chopped apples gently so they are evenly distributed throughout the batter.
- Spoon and bake. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart. Each spoonful should have a generous amount of apple pieces inside. Bake for 18–20 minutes, or until the fritters are golden brown and cooked through.
- Cool and serve. Let the fritters cool for a few minutes on the baking sheet before transferring them to a wire rack. Dust with powdered sugar, if desired, and serve warm.
