🥘 Ingredients (2 Servings)

  • 2 salmon fillets (150–180 g each)
  • 300 g baby potatoes, halved or quartered depending on size
  • 150 g mushrooms (button or cremini), halved
  • 1 medium onion, sliced into wedges
  • 2 carrots, peeled and cut into sticks or thick rounds
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, finely minced
  • 1 teaspoon dried thyme or rosemary
  • Salt and freshly ground black pepper, to taste
  • 1 lemon (zest, juice, and a few slices for topping)
  • Fresh parsley or dill, finely chopped, for garnish
