- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 ripe bananas, mashed
- 1/2 cup heavy cream (for a creamy texture)
- 1/2 cup banana pudding mix (instant)
For the Banana Pudding Topping (optional):
- 1 cup heavy whipping cream (whipped to stiff peaks)
- 1 ripe banana, sliced
- Vanilla wafer cookies for garnish
Instructions
1. Prepare the Vanilla Wafer Crust
Preheat your oven to 325°F (163°C). In a medium bowl, combine the crushed vanilla wafer cookies, melted butter, and granulated sugar. Stir until everything is well combined.
Press the mixture into the bottom of a 9-inch springform pan to form a crust. Use the back of a spoon to firmly press it down. Bake the crust for 10 minutes, then remove from the oven and allow it to cool while you prepare the cheesecake filling.
