Ingredients
For the Taco Shells:
- 8–10 small flour tortillas (street taco size works best — they’re sturdy and easy to handle)
- 3 tablespoons unsalted butter, melted (helps the sugar stick and gives richness)
- ¼ cup granulated sugar
For the Banana Pudding Filling:
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 teaspoon vanilla extract
- 2 ripe bananas, sliced
- Whipped cream (for topping)
- Cinnamon or crushed vanilla wafers (optional, for garnish)
Instructions
- Start by preparing the taco shells. Preheat your oven to 350°F (175°C). Brush the small flour tortillas with melted butter on both sides. The butter will help the sugar adhere to the tortillas and also add a rich, buttery flavor. Once brushed, sprinkle the granulated sugar evenly over both sides of each tortilla.
- Place the buttered, sugared tortillas on a baking sheet and bake them for about 8-10 minutes, or until they turn golden brown and crispy. Keep an eye on them to make sure they don’t burn. Once they’re crisp, remove them from the oven and allow them to cool slightly. If you want to shape them into taco shells, you can drape the tortillas over a rack or use a baking sheet with a slight incline to give them the taco shape while they cool.
- While the taco shells are cooling, prepare the banana pudding filling. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until it thickens, which should take about 2 minutes. Once thickened, stir in the vanilla extract for extra flavor. Let the pudding sit for a few minutes to set fully. The pudding should be thick and smooth, making it perfect for the taco filling.
- Once the taco shells have cooled and the pudding has set, it’s time to assemble the Banana Pudding Tacos. Spoon a generous amount of the vanilla pudding into each taco shell, filling them about halfway full. Be careful not to overfill, as this will make them harder to handle.
- Top the pudding with sliced bananas, distributing them evenly across each taco. The banana slices add a fresh, fruity sweetness that perfectly complements the creamy vanilla pudding.
- Finish each taco with a dollop of whipped cream and, if desired, a light sprinkle of cinnamon or some crushed vanilla wafers for a crunchy texture. These optional garnishes will add an extra touch of flavor and make the tacos even more indulgent.
