Instructions
- Prepare the crockpot. Layer the diced onion on the bottom of your crockpot. This acts as the base layer, adding flavor to the chicken as it cooks.
- Layer the chicken. Place the boneless skinless chicken thighs on top of the chopped onion in a single layer. This will allow the chicken to cook evenly while absorbing the flavors from the soup and spices.
- Prepare the soup mixture. In a mixing bowl, combine the cream of chicken soup and cream of celery soup. Stir in the poultry seasoning, fresh parsley, and black pepper to taste. Mix until everything is well combined.
- Pour the soup mixture over the chicken. Pour the soup mixture evenly over the chicken thighs in the crockpot. This will create the creamy base for the chicken and dumplings, ensuring everything cooks together nicely.
- Add the chicken broth. Pour 2 cups of chicken broth over the top of the chicken and soup mixture. This will help create the right consistency for the soup and make it flavorful as it simmers.
- Cook the chicken. Set the crockpot to high and cook for 5 hours. During this time, the chicken will cook through and become tender, and the flavors will meld together beautifully. Do not open the lid until you have just 1 hour of cook time left.
- Add the vegetables. With 1 hour of cook time remaining, open the lid and add the defrosted mixed vegetables to the crockpot. Stir them into the chicken mixture, shredding the chicken thighs as you mix. This step ensures the vegetables are evenly incorporated and add great flavor to the dish.
- Add the dumplings. Open the can of refrigerated biscuits and flatten each one. Cut each biscuit into 4 long slices, and layer them on top of the chicken and vegetable mixture in the crockpot. The biscuits will cook on top, creating soft and fluffy dumplings.
- Finish cooking the dumplings. Let the biscuits cook for the remaining hour of cook time, until they are fully cooked through and puffed up. Stir the mixture together to incorporate the dumplings into the creamy chicken mixture, then serve hot.
- Serve and garnish. Garnish with freshly chopped parsley, if desired, and serve the chicken and dumplings warm. It’s the perfect cozy meal!
Serving Notes
This crockpot chicken and dumplings dish is hearty and filling on its own, but you can also serve it with a side of warm bread or a green salad for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and can be easily reheated in the microwave or stovetop.
