Make the Special Sauce
- Add the mayonnaise, finely chopped pickles, mustard, vinegar, paprika, garlic powder, and onion powder to a small bowl. Stir gently at first, then mix more fully until the sauce becomes smooth and uniform. It should take on a pale reddish color from the paprika and look thick enough to cling to the fillings without dripping. Refrigerate while preparing the rest of the recipe so the flavors can blend and mellow.
Cook the Beef
- Warm the olive oil in a skillet over medium heat. When the surface of the oil begins to shimmer, add the chopped onion and sauté for a few minutes until soft, translucent, and fragrant. Softening the onion first removes any sharpness and helps build deeper flavor in the meat.
- Add the ground beef to the skillet. Break it apart with a spatula and continue cooking until the beef loses all traces of pink, stirring occasionally so it browns evenly. Drain any excess grease to avoid a heavy or soggy wrap.
- Season the cooked beef with salt, pepper, and Worcestershire sauce. Stir thoroughly to coat every bit of meat. Let the mixture heat for another minute so the sauce absorbs into the beef and becomes more flavorful.
