Black Folks Sweet Potato Pie

Instructions

    1. Preheat your oven to 350°F (175°C). Allow the oven to fully reach temperature so the pie bakes evenly from the start, helping the filling set properly and ensuring the crust browns gently without overcooking.
    2. Wash and peel the sweet potatoes, removing any blemishes. Cut them if needed for more even cooking. Place them in a large pot and cover with water. Boil for 20–25 minutes, or until a fork slides smoothly into the centers. Drain well to keep excess moisture out of the pie, then mash until completely smooth. Measure out exactly 2 cups for the filling.
    3. In a large mixing bowl, combine the warm sweet potatoes and softened butter. Beating them together while the potatoes are still slightly warm helps the butter melt into the mixture, creating a creamy, cohesive base with no lumps.
