- Preheat your oven to 350°F (175°C). Allow the oven to fully reach temperature so the pie bakes evenly from the start, helping the filling set properly and ensuring the crust browns gently without overcooking.
- Wash and peel the sweet potatoes, removing any blemishes. Cut them if needed for more even cooking. Place them in a large pot and cover with water. Boil for 20–25 minutes, or until a fork slides smoothly into the centers. Drain well to keep excess moisture out of the pie, then mash until completely smooth. Measure out exactly 2 cups for the filling.
- In a large mixing bowl, combine the warm sweet potatoes and softened butter. Beating them together while the potatoes are still slightly warm helps the butter melt into the mixture, creating a creamy, cohesive base with no lumps.
