Black Folks Sweet Potato Pie

  1. Bake the pie for 55–65 minutes. The pie is ready when the center is set and no longer jiggles loosely. A toothpick inserted in the middle should come out clean or with just a few moist crumbs. If the edges of the crust brown quickly, lightly tent the perimeter with foil.
  2. Allow the pie to cool at room temperature for at least 2 hours. This cooling time is essential—during this period, the filling firms up and develops its signature smooth texture, making it easy to slice and serve without sinking or breaking apart.
