Instructions

  1. Prepare the crust:
    In a medium bowl, combine the crushed chocolate cookies, melted butter, and granulated sugar (if using). Stir until the mixture is evenly combined and the crumbs are well-coated with butter. Press the mixture into the bottom of a 9-inch springform pan, creating a firm and even crust. Use the back of a spoon or a glass to press down and compact the crust. Place the pan in the refrigerator to chill while you prepare the cheesecake filling. Chilling the crust ensures it firms up before adding the creamy filling.
  2. Make the cheesecake filling:
    In a large bowl, beat the softened cream cheese and granulated sugar together using an electric mixer until smooth and creamy. Add the vanilla extract and mix to combine. Next, add the eggs one at a time, beating well after each addition. Scrape the sides of the bowl to make sure everything is well incorporated. Finally, add the sour cream (and heavy cream if using) and mix until smooth and velvety.
  3. Assemble the cheesecake:
    Pour the cheesecake batter over the chilled crust, spreading it out evenly with a spatula. Smooth the top to make sure the filling is even.
