3️⃣ Make the Pastry Cream
- In a saucepan, heat the milk until just simmering.
- In a bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
- Slowly whisk the hot milk into the egg mixture to temper the yolks.
- Return the mixture to the saucepan and cook over medium heat, whisking constantly until thickened (about 3–5 minutes).
- Remove from heat and stir in the butter and vanilla extract.
- Allow to cool completely, then spread evenly over the chilled cheesecake layer.
4️⃣ Make the Chocolate Ganache
- In a heatproof bowl, add chocolate chips.
- Heat heavy cream in a saucepan until just simmering, then pour it over the chocolate chips.
- Let sit for 1 minute, then whisk until smooth and glossy.
- Allow to cool slightly before pouring over the pastry cream layer.
- Spread evenly with a spatula and refrigerate for 30 minutes to set.
