Boston Cream Pie Cheesecake

3️⃣ Make the Pastry Cream

  1. In a saucepan, heat the milk until just simmering.
  2. In a bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
  3. Slowly whisk the hot milk into the egg mixture to temper the yolks.
  4. Return the mixture to the saucepan and cook over medium heat, whisking constantly until thickened (about 3–5 minutes).
  5. Remove from heat and stir in the butter and vanilla extract.
  6. Allow to cool completely, then spread evenly over the chilled cheesecake layer.

4️⃣ Make the Chocolate Ganache

  1. In a heatproof bowl, add chocolate chips.
  2. Heat heavy cream in a saucepan until just simmering, then pour it over the chocolate chips.
  3. Let sit for 1 minute, then whisk until smooth and glossy.
  4. Allow to cool slightly before pouring over the pastry cream layer.
  5. Spread evenly with a spatula and refrigerate for 30 minutes to set.
