1️⃣ Roast the Garlic
- Preheat your oven to 190°C (375°F). Prepare the garlic by slicing off the top of the bulb to expose the individual cloves inside. Place it on a small sheet of foil.
- Drizzle the exposed cloves with olive oil and sprinkle with a pinch of salt. Wrap the foil around the bulb to seal it loosely, allowing steam to circulate.
- Roast for 35–40 minutes, or until the cloves are soft, golden, and aromatic. The garlic should become caramelized and spreadable with a rich, mellow sweetness. Let it cool slightly before handling.
- Once cooled, gently squeeze the roasted garlic from its skins into a small bowl, mashing it lightly with a fork until it forms a smooth paste.
2️⃣ Prepare the Avocado Spread
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Add the lemon juice, salt, pepper, and chopped herbs. Mash with a fork or potato masher until combined, leaving a few small chunks for texture.
- Taste and adjust seasoning as needed — the lemon juice should brighten the flavor while keeping the avocado from browning.
