Cajun Chicken and Sausage Gumbo

  • Spice Level: Adjust the cayenne or Cajun seasoning to make it milder or hotter depending on your taste preference.
  • Sausage Substitution: While andouille sausage adds a traditional smoky flavor, kielbasa or chorizo can be used as substitutes.
  • Thicker Gumbo: If you prefer a thicker consistency, stir in a roux (equal parts flour and butter, cooked until browned) at the start, or add cooked rice directly into the gumbo during simmering.
  • Make-Ahead Friendly: Gumbo flavors improve with time. Store in the refrigerator and reheat the next day for even better taste.
