- 1 cup apple juice
- 1/2 cup caramel sauce (store-bought or homemade)
- 1/4 cup vodka
- 1 tablespoon gelatin (for setting the lollipops)

Instructions
- Begin by preparing your lollipop molds or a silicone baking tray. If you’re using lollipop sticks, insert them into the molds or tray before you start making the lollipop mixture. This will allow the sticks to set properly as the lollipops cool and harden. If you don’t have lollipop molds, you can also use parchment paper to make freeform lollipops, though molds provide a more uniform shape.
- In a small saucepan, combine 1 cup of apple juice and 1/2 cup of caramel sauce. Heat the mixture over medium heat, stirring occasionally, until the caramel has fully melted and is well incorporated with the apple juice. This creates the base flavor for your lollipops, combining the fruity sweetness of apple with the deep, buttery flavor of caramel. Once melted, bring the mixture to a simmer, and allow it to cook for 2-3 minutes to concentrate the flavors.
- While the apple-caramel mixture is heating, dissolve 1 tablespoon of gelatin in 2 tablespoons of cold water in a small bowl. Let it sit for a minute or two to allow the gelatin to bloom. This step helps the gelatin dissolve evenly and ensures the lollipops set properly without lumps.
- Once the apple-caramel mixture has simmered for a few minutes, remove it from the heat and add the bloomed gelatin. Stir the mixture until the gelatin is completely dissolved, ensuring that there are no lumps. The gelatin will give your lollipops their signature firm texture, allowing them to hold their shape once cooled.
- Next, add 1/4 cup of vodka to the apple-caramel mixture and stir well. The vodka provides a subtle, boozy kick to the lollipops without overpowering the caramel apple flavor. If you prefer a non-alcoholic version, you can omit the vodka, though the consistency may differ slightly without it.
- Carefully pour the mixture into your lollipop molds, filling each mold evenly. If you are making freeform lollipops, simply spoon small amounts of the mixture onto a piece of parchment paper in a circular shape. Make sure that the lollipop sticks are standing upright and that the mixture is evenly distributed around them.
- Allow the lollipops to cool at room temperature for about 30 minutes, then transfer them to the refrigerator. Let them set in the fridge for at least 1-2 hours, or until fully hardened. The lollipops should be firm to the touch and should easily lift from the molds when they’re ready.
- Once the lollipops have set, gently remove them from the molds or peel them off the parchment paper. If the lollipops are sticky, you can lightly dust them with powdered sugar to prevent them from sticking together or to your hands.
