Caramel Cheesecake Cookies

Ingredients

  • 8 oz (225 g) cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent the cookies from sticking.
  2. In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy. The cream cheese will provide the rich, tangy base for the cookies, and the sugar will sweeten them to perfection. Be sure to use softened cream cheese so it mixes easily without lumps.
  3. Add the vanilla extract to the cream cheese mixture and beat again until fully incorporated. The vanilla extract adds warmth and depth to the flavor profile of the cookies.
  4. Once the cream cheese mixture is smooth, use a spoon or cookie scoop to drop dollops of dough onto the prepared baking sheet. Space the dough balls about 2 inches apart to allow for spreading during baking. You can shape them into rounds or leave them slightly mounded, as they will flatten out as they bake.
  5. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden and the centers have set. These cookies should remain soft in the center but firm up as they cool.
  6. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
