Caramelized Sweet Potatoes with Honey, Goat Cheese & Walnuts

Instructions

  1. Prepare the sweet potatoes. Preheat your oven to 400°F (200°C). Peel the sweet potatoes and slice them into thick rounds, about 1/2 inch thick. Arrange the sweet potato slices on a baking sheet in a single layer.
  2. Toss with olive oil and seasonings. Drizzle the olive oil over the sweet potatoes and toss to coat evenly. Sprinkle with cinnamon (if using), salt, and black pepper to taste. Toss again to ensure even seasoning.
  3. Roast the sweet potatoes. Roast the sweet potato slices in the preheated oven for 25–30 minutes, or until they are tender on the inside and caramelized on the outside. Flip the slices halfway through the roasting time for even cooking.
  4. Prepare the topping. While the sweet potatoes are roasting, toast the walnut halves in a dry skillet over medium heat for 3–4 minutes until fragrant and lightly browned. Set them aside to cool.
  5. Assemble the dish. Once the sweet potatoes are roasted, remove them from the oven and transfer the slices to a serving platter. Crumble or slice the goat cheese over the warm sweet potatoes. Drizzle with honey, ensuring that each slice is coated in the sweet, sticky glaze.
  6. Garnish and serve. Top with the toasted walnuts and garnish with fresh thyme sprigs. Serve warm, and enjoy the combination of creamy, nutty, and sweet flavors!
