- Mix It Up: In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, eggs, chili powder, cumin, paprika, salt, and pepper. Mix until well combined but avoid overmixing to keep the meatloaf tender.
- Add the Cheese: Stir half of the cheddar cheese into the meat mixture. Shape the mixture into a loaf and place it in a lightly greased baking dish or lined loaf pan.
- Bake: Cover the dish with foil and bake at 375°F (190°C) for about 40 minutes.
- Add Glaze & More Cheese: In a small bowl, whisk together ketchup, hot sauce, and brown sugar. Remove the foil from the meatloaf, spread the glaze evenly over the top, and sprinkle with the remaining cheddar cheese.
- Finish Baking: Return to the oven and bake uncovered for another 10–15 minutes, or until the cheese is melted and bubbly and the meatloaf is fully cooked (internal temperature should reach 160°F or 71°C).
- Rest & Serve: Let the meatloaf rest for 5–10 minutes before slicing. Serve with creamy mashed potatoes, rice, or a side of pickles for a tangy crunch!
