Cheese-Stuffed Mushroom Chicken Breast 🍗🧀🍄

👩‍🍳 Instructions

1️⃣ Prepare the Stuffing

  1. In a skillet, melt butter over medium heat.
  2. Add chopped mushrooms and sauté for 4–5 minutes until softened and browned.
  3. Add minced garlic and cook for an additional 1 minute until fragrant.
  4. Remove from heat and let the mushroom mixture cool slightly.
  5. In a bowl, combine the sautéed mushrooms, cream cheese, mozzarella, Parmesan, and parsley. Season with salt and pepper to taste. Mix well until creamy and combined.

2️⃣ Prepare the Chicken

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally through the thickest part, being careful not to cut all the way through.
  3. Season the chicken breasts on both sides with olive oil, paprika, salt, and pepper.

3️⃣ Stuff the Chicken

  1. Stuff each chicken breast with the mushroom and cheese mixture, dividing the stuffing evenly between the fillets.
  2. Use toothpicks or kitchen twine to secure the openings, keeping the filling inside.

4️⃣ Cook the Chicken

  1. Heat a large oven-safe skillet over medium-high heat and add olive oil.
  2. When the oil is hot, sear the chicken breasts for 3–4 minutes per side, until golden brown.
  3. Transfer the skillet to the preheated oven and bake for 18–20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F / 74°C).

5️⃣ Serve

  • Remove the chicken from the oven and let it rest for a few minutes before serving.
  • Serve with your favorite sides such as roasted vegetables, mashed potatoes, or a fresh green salad.
