1️⃣ Prepare the Stuffing
- In a skillet, melt butter over medium heat.
- Add chopped mushrooms and sauté for 4–5 minutes until softened and browned.
- Add minced garlic and cook for an additional 1 minute until fragrant.
- Remove from heat and let the mushroom mixture cool slightly.
- In a bowl, combine the sautéed mushrooms, cream cheese, mozzarella, Parmesan, and parsley. Season with salt and pepper to taste. Mix well until creamy and combined.
2️⃣ Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally through the thickest part, being careful not to cut all the way through.
- Season the chicken breasts on both sides with olive oil, paprika, salt, and pepper.
3️⃣ Stuff the Chicken
- Stuff each chicken breast with the mushroom and cheese mixture, dividing the stuffing evenly between the fillets.
- Use toothpicks or kitchen twine to secure the openings, keeping the filling inside.
4️⃣ Cook the Chicken
- Heat a large oven-safe skillet over medium-high heat and add olive oil.
- When the oil is hot, sear the chicken breasts for 3–4 minutes per side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 18–20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F / 74°C).
5️⃣ Serve
- Remove the chicken from the oven and let it rest for a few minutes before serving.
- Serve with your favorite sides such as roasted vegetables, mashed potatoes, or a fresh green salad.
