Cheesy Mashed Potato Puffs

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with butter or nonstick spray to prevent sticking and to help the puffs crisp around the edges.
  2. Mix the filling: In a large mixing bowl, combine the mashed potatoes, shredded cheddar, Parmesan, and eggs. Season with salt and freshly ground black pepper to taste. Stir thoroughly until the mixture is evenly combined and smooth. The eggs help bind the mixture, while the cheeses provide a melty, savoury bite.
  3. Portion the puffs: Spoon the potato mixture evenly into the prepared muffin cups, filling each about ¾ full. Use the back of a spoon to gently level the tops for even baking.
  4. Bake: Place the muffin tin in the preheated oven and bake for 20–25 minutes, or until the tops are golden and slightly crisp. The edges should brown nicely and pull away slightly from the sides of the tin.
  5. Cool and serve: Let the puffs cool in the pan for 5 minutes to firm up before removing. Use a butter knife to gently lift each one out. Garnish with chopped chives or green onions if desired, and serve warm.
