Cheesy Pan-Fried Zucchini Rounds

Instructions:

1. Prep the Zucchini

Wash and slice zucchini into even rounds.
Sprinkle with salt and pepper.

2. Pan-Fry to Perfection

Heat olive oil in a large skillet over medium heat.
Add zucchini slices in a single layer.
Cook 2–3 minutes per side, until golden and tender.

3. Add the Cheese

Reduce heat to low.
Sprinkle mozzarella and Parmesan over the rounds.
Cover and cook 1–2 minutes, until cheese is melted and bubbly.

4. Serve Warm

Transfer to a serving platter.
Garnish with fresh parsley.
Serve immediately and enjoy every crispy, cheesy bite.
