Ingredients
- 1 lb (450 g) ground beef (80/20 blend for juiciness)
- 1 can (10 oz) Rotel tomatoes with green chilies, undrained (for a zesty, spicy base)
- 1 packet taco seasoning (or homemade taco seasoning blend)
- 1 ½ cups shredded cheddar cheese (for a melty, cheesy filling)
- Soft or hard taco shells (for serving)
- Optional toppings: sour cream, lettuce, diced tomatoes, shredded lettuce, salsa, jalapeños, avocado, or cilantro
Instructions
- Cook the ground beef: In a large skillet, heat the ground beef over medium heat. Break it up with a spoon as it cooks. Cook for about 7-8 minutes, or until the beef is browned and fully cooked through. Drain any excess grease from the pan if necessary.
- Add the seasoning and Rotel: Once the beef is cooked, stir in the taco seasoning packet (or homemade blend). Add the can of undrained Rotel tomatoes with green chilies, stirring everything together to combine. Let it simmer for 5-7 minutes, or until the mixture is heated through and the flavors meld together. Taste and adjust seasoning if needed.
- Make it cheesy: Reduce the heat to low and sprinkle 1 ½ cups of shredded cheddar cheese over the beef and Rotel mixture. Stir until the cheese melts completely and the filling becomes creamy and cheesy. This will give the tacos a delicious, gooey filling.
- Assemble the tacos: Warm the taco shells in the oven or microwave according to the package instructions. Once warmed, fill each shell with a generous spoonful of the cheesy beef and Rotel mixture.
- Top and serve: Add your favorite taco toppings, such as sour cream, shredded lettuce, diced tomatoes, salsa, or avocado. Serve the tacos immediately while they’re warm and cheesy, and enjoy the delicious, spicy, and savory flavors!
