Instructions
1. Prep the Filling
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
- Add taco seasoning and water. Simmer 3–4 minutes until thickened.
- Stir in black beans, corn, and diced tomatoes with green chiles. Mix well and remove from heat.
2. Assemble the Taco Lasagna
- Spread 2–3 tablespoons of salsa or enchilada sauce on the bottom of the baking dish.
- Place 2 tortillas in the dish (cut to fit as needed to cover the base).
- Spoon a third of the beef mixture over the tortillas, then sprinkle with a layer of cheese.
- Repeat the layers — tortillas, beef, cheese, and a little salsa — until all ingredients are used, finishing with a final layer of cheese on top.
3. Bake & Serve
