Cheesy Taco Lasagna (Layered Tex-Mex Casserole Delight) 🌮🧀

Instructions

1. Prep the Filling

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
  3. Add taco seasoning and water. Simmer 3–4 minutes until thickened.
  4. Stir in black beans, corn, and diced tomatoes with green chiles. Mix well and remove from heat.

2. Assemble the Taco Lasagna

  1. Spread 2–3 tablespoons of salsa or enchilada sauce on the bottom of the baking dish.
  2. Place 2 tortillas in the dish (cut to fit as needed to cover the base).
  3. Spoon a third of the beef mixture over the tortillas, then sprinkle with a layer of cheese.
  4. Repeat the layers — tortillas, beef, cheese, and a little salsa — until all ingredients are used, finishing with a final layer of cheese on top.

    3. Bake & Serve
