Christmas Log with Fruits and Mascarpone

In a separate bowl, sift together the flour, baking powder, and a pinch of salt. Gently fold the sifted dry ingredients into the egg mixture using a spatula, being careful not to deflate the batter. Stir just until combined, ensuring the mixture remains airy and light.

  • Bake the sponge cake: Pour the batter into the prepared jelly roll pan, spreading it evenly with a spatula. Bake for 10-12 minutes, or until the cake is lightly golden and springs back when gently pressed in the center. Once baked, immediately remove the cake from the oven and turn it out onto a clean kitchen towel that has been dusted with powdered sugar. In a medium mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and fluffy. Use a hand mixer or stand mixer on medium-high speed to whip the mixture until it holds soft peaks. Once the filling is ready, gently fold in the fresh fruit (berries, pomegranate seeds, or diced kiwi) until evenly distributed.
  • Assemble the Christmas log: Once the sponge cake has cooled completely, carefully unroll it from the towel. Spread the mascarpone filling evenly over the cake, leaving a small border at the edges. Carefully roll the cake back up, this time without the towel, ensuring the filling is tucked inside and the roll is tight. If needed, trim the ends of the log for a neat presentation.
  • Decorate the log: Transfer the rolled cake to a serving platter. Garnish with additional fresh fruit, such as whole strawberries, raspberries, or kiwi, for a festive touch. If desired, dust the top with powdered sugar for an elegant, snowy effect. Mint leaves can also be added for a pop of green color and freshness.
  • Serve: Slice the Christmas log into portions and serve chilled or at room temperature. This dessert is perfect for holiday celebrations, offering a beautiful and flavorful twist on the traditional Yule log. The light sponge cake paired with the creamy mascarpone filling and fresh fruit makes for a refreshing and festive dessert.
