Cilantro Lime Rice (Fluffy & Zesty Side Dish)

Instructions

  1. Rinse the rice: Place the rice in a fine mesh strainer and rinse under cold running water for 20–30 seconds. Swirl it gently with your fingers until the water runs mostly clear. This removes excess starch and helps prevent the rice from becoming sticky after cooking.
  2. Cook the rice: In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover with a tight-fitting lid, and simmer for 15–18 minutes, or until all the water is absorbed and the rice is tender. Avoid lifting the lid during cooking to maintain even steam and prevent undercooked grains.
  3. Let it rest: Remove the pan from heat and let it sit, covered, for 5 minutes. This resting period allows the moisture to distribute evenly throughout the rice, resulting in a fluffy texture.
  4. Fluff and season: After resting, remove the lid and add the butter. Gently fluff the rice with a fork to separate the grains while mixing in the butter as it melts. Stir in the lime juice and chopped cilantro until evenly distributed. The herbs should be bright green and fresh, while the lime adds a light tang that enhances every bite.
