Classic Buckeyes (Peanut Butter Chocolate Balls)

  1. In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth and creamy.
  2. Gradually add powdered sugar, one cup at a time, mixing until a thick, dough-like consistency forms. The dough should be firm enough to roll into balls without sticking to your hands.

2️⃣ Roll and Chill:

  1. Scoop tablespoon-sized portions of the mixture and roll into smooth balls.
  2. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes, or freeze for 15–20 minutes, until firm.

3️⃣ Dip in Chocolate:

  1. In a microwave-safe bowl, melt the chocolate chips and optional shortening in 30-second intervals, stirring between each until smooth.
  2. Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed on top to resemble a buckeye nut.
  3. Let excess chocolate drip off, then return to the lined tray.
