👨🍳 Instructions
1️⃣ Season & Sear the Roast:
- Generously season the chuck roast with salt and pepper on all sides.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Once hot, sear the roast for 3–4 minutes per side until a deep brown crust forms. This step locks in flavor.
- Remove roast and set aside.
2️⃣ Sauté Aromatics:
- In the same pot, add the quartered onion and cook for 2–3 minutes, stirring occasionally.
- Add minced garlic and cook for another 30 seconds until fragrant.
3️⃣ Build the Braise:
- Return the roast to the pot and add beef broth. The liquid should come about ⅓ to halfway up the side of the meat.
- Optional: Sprinkle in dried thyme or rosemary for extra depth.
- Cover the pot tightly with a lid.
