Classic Pot Roast with Carrots, Potatoes & Onion

👨‍🍳 Instructions

1️⃣ Season & Sear the Roast:

  1. Generously season the chuck roast with salt and pepper on all sides.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Once hot, sear the roast for 3–4 minutes per side until a deep brown crust forms. This step locks in flavor.
  4. Remove roast and set aside.

2️⃣ Sauté Aromatics:

  1. In the same pot, add the quartered onion and cook for 2–3 minutes, stirring occasionally.
  2. Add minced garlic and cook for another 30 seconds until fragrant.

3️⃣ Build the Braise:

  1. Return the roast to the pot and add beef broth. The liquid should come about ⅓ to halfway up the side of the meat.
  2. Optional: Sprinkle in dried thyme or rosemary for extra depth.
  3. Cover the pot tightly with a lid.
