Directions
- Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking pan by lining it with parchment paper. Leave some parchment paper hanging over the sides of the pan, which will make it much easier to lift the bars out after baking. The overhang serves as handles and helps avoid breaking the bars when removing them from the pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, and salt. The baking soda will help the bars rise slightly, giving them a tender texture, while the salt will enhance the sweetness of the cookie bars. Set this mixture aside.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Use a whisk or hand mixer to mix the ingredients until smooth and well-blended. The melted butter adds richness, while the brown sugar lends a deeper flavor with its molasses undertones. The combination of the two sugars will give the bars a beautifully chewy texture.
- Beat in the egg and vanilla extract into the sugar mixture. The egg will help bind everything together, while the vanilla adds a fragrant, warm flavor. Mix until everything is fully incorporated, ensuring there are no streaks of egg or vanilla visible in the mixture.
- Gradually add the dry flour mixture to the wet ingredients, stirring gently with a spatula or spoon until just combined. Be careful not to overmix at this stage, as this could make the dough dense. You want to stir just enough to fully combine the ingredients into a thick dough.
