Cowboy Butter Potatoes

Serving the Cowboy Butter Sauce

  1. While the potatoes are roasting, prepare the cowboy butter sauce. In a medium-sized saucepan, melt 1/2 cup of unsalted butter over medium heat. The butter will form the base for the sauce, adding richness and a silky texture to the potatoes. Allow the butter to melt slowly and become bubbly, but don’t let it brown or burn.
  2. Once the butter has melted, add 2 cloves of minced garlic to the pan. Garlic is key to infusing the sauce with a deep, savory aroma. Sauté the garlic in the melted butter for 1-2 minutes, until fragrant, being careful not to burn it. Garlic can turn bitter if overcooked, so keep the heat at medium and stir frequently.
  3. Next, add 1 teaspoon of dried parsley, 1/2 teaspoon of smoked paprika, and 1/4 teaspoon of red pepper flakes to the butter mixture. These seasonings will add a smoky, mildly spicy kick to the sauce, along with a burst of herbal freshness from the parsley. Stir the sauce to combine, then reduce the heat to low to keep it warm while the potatoes finish baking.
  4. Once the potatoes are roasted and golden, remove them from the oven and transfer them to a serving dish. Drizzle the warm cowboy butter sauce over the crispy potatoes, making sure each piece is well-coated. You can also toss the potatoes gently to ensure an even distribution of the butter sauce.

Serving Suggestions

  • Serve the Cowboy Butter Potatoes as a side dish to steak, chicken, or grilled meats. Their rich flavor pairs perfectly with the savory notes of any main course.
  • If you want to add a bit more freshness, garnish the potatoes with chopped fresh parsley or chives. This will give the dish a pop of color and an added layer of fresh flavor.
  • For a more decadent treat, top the potatoes with crumbled bacon or grated Parmesan cheese right before serving. This adds a delightful crunch and extra richness to the dish.

Notes

  • If you’re short on time, you can cook the potatoes in the air fryer. Simply toss the halved potatoes in olive oil and salt, then air fry at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through.
  • For a lighter version, you can reduce the amount of butter in the sauce and add a squeeze of fresh lemon juice for a burst of brightness.
  • These potatoes are best served immediately after drizzling with the cowboy butter sauce to maintain their crispy texture. However, leftovers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place them on a baking sheet and bake at 375°F (190°C) for 10-15 minutes to bring back some crispiness.
