How to Make It

1️⃣ Boil the Pasta

Cook the pasta in salted boiling water until al dente. The strands should be tender but still springy in the center. Drain and reserve ½ cup of pasta water—this starchy liquid later helps emulsify the sauce, creating a smooth, silky finish that clings beautifully to every strand.

2️⃣ Sear the Shrimp

Toss the shrimp with Cajun seasoning, salt, and pepper until evenly coated. Heat the olive oil in a hot skillet. Sear the shrimp for 1–2 minutes per side, just until pink and lightly charred in spots. Remove them from the pan so they stay juicy and avoid overcooking. Their seared edges help intensify the smoky Cajun flavor.

3️⃣ Build That Bold Cream Sauce

Lower the heat and melt the butter in the same skillet. Add the minced garlic and cook briefly until fragrant—about 30 seconds—being careful not to brown it. Pour in the heavy cream and stir gently for 2–3 minutes as it warms and begins to thicken. Add the Parmesan and optional chili flakes, stirring continuously until the sauce turns glossy and rich. It should coat the spoon lightly without becoming overly thick.
