1️⃣ Cook the Pasta 🍝

  1. Bring a large pot of salted water to a boil.
  2. Add the penne pasta and cook until al dente, about 10–11 minutes.
  3. Reserve Β½ cup of pasta water, then drain and set aside.

2️⃣ Season & Sear the Shrimp 🦐

  1. Toss the shrimp with 1 tablespoon olive oil and Cajun seasoning until evenly coated.
  2. Heat a large skillet over medium-high heat. Cook shrimp for 1–2 minutes per side, until pink and cooked through.
  3. Remove shrimp from the skillet and set aside.

3️⃣ Make the Creamy Sauce πŸ§„πŸ₯›

  1. In the same skillet, add the remaining oil or butter. SautΓ© the minced garlic for about 30 seconds until fragrant.
  2. Pour in chicken broth, scraping up any browned bits from the skillet.
  3. Add heavy cream and bring to a gentle simmer. Let it cook for 2–3 minutes, until it thickens slightly.
  4. Stir in Parmesan cheese until melted and smooth, then add the chopped spinach and cook for 1–2 minutes until wilted.

4️⃣ Combine Everything 🍝

  1. Return the shrimp to the skillet and add the cooked pasta.
  2. Toss everything together to coat the shrimp and pasta in the creamy sauce.
  3. If the sauce is too thick, add the reserved pasta water a little at a time until you reach your desired consistency.
  4. Taste and adjust seasoning with salt, pepper, or extra Cajun spice if desired.
