1οΈβ£ Cook the Pasta π
- Bring a large pot of salted water to a boil.
- Add the penne pasta and cook until al dente, about 10β11 minutes.
- Reserve Β½ cup of pasta water, then drain and set aside.
2οΈβ£ Season & Sear the Shrimp π¦
- Toss the shrimp with 1 tablespoon olive oil and Cajun seasoning until evenly coated.
- Heat a large skillet over medium-high heat. Cook shrimp for 1β2 minutes per side, until pink and cooked through.
- Remove shrimp from the skillet and set aside.
3οΈβ£ Make the Creamy Sauce π§π₯
- In the same skillet, add the remaining oil or butter. SautΓ© the minced garlic for about 30 seconds until fragrant.
- Pour in chicken broth, scraping up any browned bits from the skillet.
- Add heavy cream and bring to a gentle simmer. Let it cook for 2β3 minutes, until it thickens slightly.
- Stir in Parmesan cheese until melted and smooth, then add the chopped spinach and cook for 1β2 minutes until wilted.
4οΈβ£ Combine Everything π
- Return the shrimp to the skillet and add the cooked pasta.
- Toss everything together to coat the shrimp and pasta in the creamy sauce.
- If the sauce is too thick, add the reserved pasta water a little at a time until you reach your desired consistency.
- Taste and adjust seasoning with salt, pepper, or extra Cajun spice if desired.
5οΈβ£ Serve π½οΈ
- Plate the creamy Cajun shrimp pasta and garnish with fresh chopped parsley or green onions.
- Serve immediately, with extra Parmesan on the side if desired!
