METHOD
1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente.
- Drain, reserving about ½ cup of pasta water, and set aside while preparing the sauce.
2️⃣ Prepare the Chicken and Bacon
- In a large pan over medium-high heat, heat the cooking oil.
- Add the chicken strips and bacon bits. Fry for about 3 minutes until lightly golden and the bacon begins to crisp.
3️⃣ Add the Vegetables
- Add the chopped onion, red pepper, and crushed garlic to the pan. Sauté until the vegetables are soft and fragrant, about 3–4 minutes.
4️⃣ Make the Cream Sauce
- Pour in the white wine (if using) and let it simmer for about 2 minutes to reduce slightly.
- Add the fresh cream and stir well. Lower the heat and simmer gently for another 2–3 minutes until the sauce thickens slightly.
- Season with Amapelepele chicken spice and freshly ground black pepper. Taste and adjust seasoning if needed.
5️⃣ Combine and Serve
