1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil and cook elbow macaroni according to package directions until al dente. Drain and set aside.
2️⃣ Cook the Chicken
- Season chicken with salt, pepper, and garlic powder.
- In a large skillet, heat olive oil or butter over medium heat.
- Add the chicken and cook for 6–8 minutes, or until golden brown and fully cooked through. Remove from heat and set aside.
3️⃣ Make the Cheese Sauce
- In a large saucepan or deep skillet, melt 2 tablespoons butter over medium heat.
- Whisk in the flour and cook for 1–2 minutes, stirring constantly, to form a roux.
- Slowly whisk in milk and cream, making sure there are no lumps.
- Simmer gently for 3–5 minutes until slightly thickened.
- Stir in shredded cheddar and mozzarella cheeses until melted and smooth. Add paprika or mustard powder, if using.
