👩🍳 Instructions
1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil. Cook linguini according to package directions until al dente. Drain and set aside.
2️⃣ Make the Cream Sauce
- In a large skillet or saucepan, melt the butter over medium heat.
- Add the diced onion and cook until softened, about 3–4 minutes. Add garlic and mushrooms (if using) and sauté another 2 minutes.
- Sprinkle flour over the mixture and stir constantly for 1 minute to create a roux.
- Gradually whisk in the chicken broth until smooth, then add the heavy cream.
- Season with salt, pepper, and Italian seasoning if using. Bring to a gentle simmer and cook until slightly thickened, about 5 minutes.
3️⃣ Combine & Assemble
- In a large mixing bowl, combine the cooked pasta, shredded chicken, and sauce. Stir in half of the cheddar and mozzarella cheeses.
- Pour the mixture into a greased 9×13-inch baking dish. Sprinkle the remaining cheddar, mozzarella, and all of the Parmesan cheese evenly on top.
