👩🍳 Instructions
1️⃣ Cook the Pasta 🍝
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente.
- Drain and set aside, reserving ¼ cup of pasta water for adjusting the sauce if needed.
2️⃣ Cook the Shrimp 🦐
- Pat shrimp dry and season with smoked paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp and cook for 2–3 minutes per side until pink and cooked through.
- Remove shrimp from the skillet and set aside.
3️⃣ Make the Creamy Chipotle Sauce 🍶
- In the same skillet, reduce heat to medium and add the butter.
- Sauté garlic and shallot for 1–2 minutes until soft and fragrant.
- Add the finely chopped chipotle peppers in adobo and stir for 30 seconds to release the flavor.
- Pour in the heavy cream and stir well to combine.
- Add Parmesan cheese and lime juice, stirring until the sauce is smooth and lightly thickened.
- Season with salt and pepper to taste. If the sauce becomes too thick, add reserved pasta water 1 tablespoon at a time until desired consistency is reached.
4️⃣ Combine Pasta & Shrimp 🥢
- Add the cooked pasta to the sauce and toss until evenly coated.
- Gently fold in the cooked shrimp and stir to combine.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
