Creamy Chipotle Shrimp Pasta 🍝🦐🌶️

👩‍🍳 Instructions

1️⃣ Cook the Pasta 🍝

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta according to package instructions until al dente.
  3. Drain and set aside, reserving ¼ cup of pasta water for adjusting the sauce if needed.

2️⃣ Cook the Shrimp 🦐

  1. Pat shrimp dry and season with smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and cook for 2–3 minutes per side until pink and cooked through.
  4. Remove shrimp from the skillet and set aside.

3️⃣ Make the Creamy Chipotle Sauce 🍶

  1. In the same skillet, reduce heat to medium and add the butter.
  2. Sauté garlic and shallot for 1–2 minutes until soft and fragrant.
  3. Add the finely chopped chipotle peppers in adobo and stir for 30 seconds to release the flavor.
  4. Pour in the heavy cream and stir well to combine.
  5. Add Parmesan cheese and lime juice, stirring until the sauce is smooth and lightly thickened.
  6. Season with salt and pepper to taste. If the sauce becomes too thick, add reserved pasta water 1 tablespoon at a time until desired consistency is reached.

4️⃣ Combine Pasta & Shrimp 🥢

  1. Add the cooked pasta to the sauce and toss until evenly coated.
  2. Gently fold in the cooked shrimp and stir to combine.
  3. Serve hot, garnished with fresh parsley and extra Parmesan if desired.
