1️⃣ Brown the Meat
- In a large soup pot or Dutch oven, cook the ground beef (or turkey) over medium heat until browned and cooked through. Drain excess grease if needed.
- Add onions and garlic. Sauté for 2–3 minutes until softened and fragrant.
2️⃣ Build the Soup Base
- Add black beans, corn, diced tomatoes, potatoes, broth, cream of mushroom soup, and all seasonings (chili powder, paprika, salt, pepper).
- Stir to combine. Bring to a boil, then reduce heat to low and simmer for 20–25 minutes, or until potatoes are fork-tender.
3️⃣ Make It Creamy
- Stir in shredded cheddar cheese until melted and the soup is creamy.
- Optional: For added richness, stir in sour cream or a splash of heavy cream just before serving.
