Creamy Peanut Butter Cup Pie Recipe – Quick and No-Bake

Ingredients

For the Crust:

  • 24 Oreo cookies (or graham crackers, 1 ½ cups crushed)
  • 6 tbsp unsalted butter, melted

For the Filling:

  • 1 cup (240g) creamy peanut butter
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 ½ cups whipped topping (such as Cool Whip)
  • 1 cup mini peanut butter cups, chopped (optional for garnish)

Instructions

  1. Start by preparing the crust. If using Oreo cookies, place them in a food processor and pulse until they’re finely crushed. You can also crush them by placing them in a resealable plastic bag and using a rolling pin. If you prefer a graham cracker crust, crush 1 ½ cups of graham crackers in the same way. Once you have the crumbs, place them in a large mixing bowl.
  2. Pour the melted butter into the crushed cookies (or graham crackers) and stir until the mixture is well combined. The butter will help bind the crumbs together to form the crust. The texture should be similar to wet sand, holding together when pressed. Transfer the crumb mixture into a 9-inch pie dish and press it into the bottom and up the sides to form a compact crust. Use the back of a spoon or your fingers to pack the crumbs down tightly.
  3. Once the crust is prepared, place the pie dish in the refrigerator while you prepare the filling. This will help the crust firm up as it chills.
  4. For the filling, use an electric mixer or a hand mixer to beat the softened cream cheese in a large mixing bowl until it’s smooth and creamy. Add the peanut butter and continue beating until both ingredients are well combined. The peanut butter should be fully incorporated into the cream cheese mixture, resulting in a rich, smooth base for the filling.
  5. Next, add the powdered sugar to the peanut butter mixture. Beat on low speed at first to prevent the sugar from flying everywhere, then gradually increase the speed until the mixture is smooth and creamy. The powdered sugar will add sweetness and help the filling firm up.
  6. Once the sugar is fully incorporated, fold in the whipped topping. This will lighten the filling and make it smooth and fluffy. You can use a spatula to gently fold the whipped topping into the peanut butter mixture, being careful not to deflate it.
