- Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook until browned on both sides. Remove from skillet and set aside.
- Cook the Chicken: In the same skillet, add diced chicken breasts, onion, garlic, Italian seasoning, salt, and pepper. Sauté for 5–7 minutes, until the chicken is cooked through and no longer pink.
- Cook the Pasta: While the chicken cooks, prepare the pasta according to package instructions. Drain and set aside.
- Make the Sauce: Once the chicken is cooked, return the browned sausage to the skillet. Add chicken broth and heavy cream, stirring well to combine. Bring to a gentle simmer and let the sauce thicken slightly, about 3–5 minutes.
- Add the Cheese: Reduce heat to low and stir in the Pepper Jack and Parmesan cheeses until melted and the sauce becomes smooth and creamy.
- Combine: Add the cooked pasta to the skillet and toss until evenly coated in the sauce. Adjust seasoning with salt and pepper to taste.
- Serve: Garnish with freshly chopped parsley and an extra sprinkle of Parmesan, if desired. Serve hot and enjoy!
