1. Sauté the Base
- Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.The oil should shimmer slightly, indicating it’s hot enough to begin sautéing without burning the aromatics.
- Add the chopped onions and sliced sausage. Sauté until the onions turn translucent and the sausage takes on light browning, about 6–8 minutes.The onions should soften while the sausage releases flavorful fats that coat the pot, forming the base of the soup.
2. Add the Garlic
- Stir in the minced garlic and cook for 1 more minute until fragrant.The garlic will soften quickly—look for its aroma to bloom without allowing it to brown, as browning can produce bitterness.
